About the course
Food chemistry is concerned with analytical, biochemical, chemical, physical, nutritional, and toxicological aspects of foods and food ingredients. The long-term goals of research in food chemistry are to understand relationships between the structure and functional properties of food molecules and to improve the nutritional, safety and organoleptic aspects of food. Students of food chemistry must have a strong background in the basic sciences and should specialize in one or more of the following minor areas: organic chemistry, biochemistry, nutritional biochemistry, physical chemistry, toxicology, analytical chemistry, and chemical engineering. Opportunities for research projects in food chemistry include structure/function relationships in food molecules (rheology, emulsions, foams, gels), computer modeling of food molecules, effects of processing, fortification, and packaging on nutritional quality of foods, food toxicology, and flavor chemistry of fruits and vegetables. Entry requirements for Cornell University
Statement of purpose: Must include career/professional goals, research and/or academic
interests, applicable experience (research skills, internships, etc.) as it relates to your
research/academic interests, and the names of faculty with research programs of interest.
Resume
Unofficial transcripts: Please do not have your University mail official transcripts. You may scan
and submit your official transcripts electronically or upload another electronic version of your
transcripts.
2-3 letters of recommendation
GRE scores: Scores are self-reported in the application. You must also request ETS to send official
scores (college code – 2098, department code – 0107)
IELT scores: The Graduate School requires an overall band score of a 7.0 or higher on the IELTS. Graduate School TOEFL iBT score
requirements are: 20 Writing, 15 Listening, 20 Reading, 22 Speaking.
GRE scores: 153-160 verbal, 155-166 quantitative, 3.5-4.5 analytical/writing
We do not have a minimum GPA requirement but look for strong performance in science courses
(mainly A’s and B’s) in addition to approximately 15 credit hours of college-level science
coursework.
